Happy St. Valentine's Day! Strawberry Jelly Biscuits

The entire time I made this post I was singing The Searcher's song in my head...
Ok maybe it was out loud...
"And if you wanted a love to last forever,
Darlin' I'll send my love your way,
and my love'd not only last forever,
but forever and a day,
And I'd bring,
Sweets for my sweet, Sugar for my Honey,
Your first Sweet kiss thrilled me so!"

It's so catchy, gotta love that guitar riff...anyway.
I've never really celebrated Valentine's day per say. There are 365 days in a year to show the person you love how much they mean to you, we don't need a socially prescribed holiday.
I love the fact that Kishore will just pick up some flowers for me on a random day because he thought I'd like some sunshine.
My Rosenkavalier :)
In any case, I wanted to make a little sweet something special for my Sweetheart for Valentine's day.
The thing is...Kishore's not crazy for sweet things, so that kind of put me into a predicament. I was looking through my recipes when I remembered Jelly Biscuits! These tasty treats have just the right amount of sweet, and are quick and easy to prepare. The Strawberry and Almond flavors meld to give a fresh, lightly sweet treat. They are great as a breakfast treat or an afternoon tea treat.

Here's my Recipe for these Slightly Sweet Treats:

Ricotta and Guava Pastries (Pasteles de Queso y Guayaba)

When I was a kid, one special kind of treat that my mom would make was Sweet Pasteles filled with Vanilla Ricotta.  She got the recipe years ago from a Colombian friend of hers. I remember her making them for me and serving it with a cup of Hot Chocolate.
I know the Ricotta and Vanilla may sound like a strange combination but it reminds me of Thai fried ice cream... The inside has a sweet vanilla ice cream like taste with a crispy, crunchy shell.
My favorite ones have Guava in them. I know it can be something of an acquired taste but that tart sweetness with a nice Caf├ęcito....Mmm so good!
The nice thing about this snack is that you can whip it up in a pinch, and stuff it with what you have.
This is the perfect "Hostess in a pinch" kind of recipe. These can be whipped up in 15-20 minutes.

Don't have time to make dough?.... Use a Pillsbury biscuit tube instead!
Don't have Ricotta or Guava Paste? Use Mozzarella with Brown Sugar and bake it instead.
The possibilities are endless!
Here is my version of my mother's friend's recipe for these Tasty Pastries:
