Baked Scotch Quail Eggs

I'm generally not one to go crazy fan girl over TV shows but this Saturday is the return of 'Outlander' and I'm honestly excited. Since they made me wait way to long to find out what happened, I started reading the book, haha. In either case, I wanted to make a dish to celebrate the return of Jamie Fraser...I mean 'Outlander.' 

Being the day before Easter, what better way to celebrate than to use cute little quail eggs to make Scotch eggs! 
Scotch eggs are hard-boiled eggs wrapped in sausage and then deep fried. They are believed to have originated in the Medieval Scottish Highlands as a quick, travel friendly meal for farmers and shepherds, but there are similar recipes from The Netherlands to Mughal India... Which makes this recipe perfectly apt for this blog! 
For my version, I decided to bake instead of fry them, spiced up the breadcrumbs and instead of using regular flour I swapped it for Rice flour to get a good crisp on the baking. 

These Spicy Sausage wrapped Eggs are baked to a crisp and are perfect served with a dollop of homemade mustard and a spinach salad.

Here's my recipe for Baked Scotch Quail Eggs:
Makes 12

Ingredients:

12 Soft Boiled Quail Eggs, Peeled
1lb Spicy Sausage, taken out of it's case
1 Cup Seasoned Breadcrumbs*
1/2 Cup Rice Flour
3 Tblsp Melted Butter
1 tsp Dried Thyme
1 tsp Hot Paprika
1 tsp Dried Parsley
1/2 tsp Salt
*Swap in gluten-free breadcrumbs if need be.

Prep: 
  • Boil the quail eggs for 3 minutes. To peel them: pour out the hot water, put the lid on the pot and shake vigorously, shells should be easy to just take off. 
  • Prepare a baking sheet with foil and oil it lightly.
  • Preheat the oven to 400F. 

Directions:

1.  Mix the Rice flour and Breadcrumbs with the Thyme, Paprika, Parsley, and Salt.


2. Set up your Breading station: Sausage, Peeled eggs, Melted Butter, Breadcrumb Mix.


3. Take a heaping Tablespoon of Sausage and flatten into a disc with your hands. Place the egg in the middle and wrap the sausage around it. Roll the covered egg in the melted butter, then roll till covered in the breadcrumb mix. Place on prepped baking sheet.


4. Place egg-filled baking sheet in the oven for 15-20 minutes.


Serve with a side of mustard and a salad. Enjoy!
