Spice Mixes

Cajun Spice Mix

Makes 4 oz.

4 tsp Garlic Powder
4 tsp Onion Powder
4 tsp Hot Paprika
2 tsp Fresh Ground Black Pepper
2 tsp Cayenne pepper
3 tsp Dried Thyme
3 tsp Dried Oregano

Mix well and store in a clean glass container for up to 3 months.

Chai Spice Powder


Makes 8 oz.

25 Green Cardamom Pods
5 Cinnamon Sticks
3 Star Anise
1 tsp Cloves
1/4 tsp Ground Nutmeg


Grind into a fine powder. Store in a clean glass container for up to 3 months.





Chinese 5-spice Powder


Makes 4 oz.

2 Tblsp Sichuan Peppercorns
1 Tblsp Ground Cinnamon
1/2 Tblsp Fennel Seeds
8 Star Anise
1/2 tsp Cloves


Grind into a fine powder. Store in a clean glass container for up to 3 months.





Curry Powder


Makes 8 oz.

10-12 Dried Curry Leaves
12 Cardamom Pods
1/2 cup Coriander Seeds
1/2 cup Red Chilies
1 Cinnamon Stick
1 Tblsp Cumin Seeds
1 Tblsp Fenugreek Seeds
1 Tblsp Mustard Seeds
2 Tblsp Turmeric
1 tsp Black Peppercorns

Dry Roast all the spices (except turmeric) until fragrant.
Grind into a fine powder. Store in a clean glass container for up to 3 months.



Garam Masala


Makes 8 oz.

10-12 Dried Curry Leaves
1/2 cup Coriander Seeds
1/4 cup Red Chilies
1 Tblsp Black Peppercorns
1 Tblsp Cumin Seeds
1 Tblsp Cardamom Pods
1 tsp Fennel Seeds
1 tsp Mustard Seeds
1 tsp Cloves
2 tsp Turmeric

Dry Roast all the spices (except turmeric) until fragrant.
Grind into a fine powder. Store in a clean glass container for up to 3 months.



Harissa Paste

Makes 8 oz.

10-12 Dried Chilies
4 Garlic Cloves
1 Tblsp Cumin Seeds
1/2 Tblsp Coriander Seeds
1 tsp salt
3/4 cup Olive Oil

Soak the dried chilies in water until soft.
Grind cumin and coriander into a fine powder. Blend everything into a paste.
Store in a clean glass container for up to a month.



Lebanese 7 Spice Powder

Makes 4oz.

1 Tblsp Allspice
1 Tblsp  Black Pepper
1 Tblsp  Cinnamon
1 Tblsp  Ground Cloves
1 Tblsp  Ground Nutmeg
1 Tblsp  Fenugreek
1 Tblsp Powdered Ginger

Grind into a fine powder. Store in a clean glass jar for up to 3 months.



Pumpkin Spice Mix

Makes 4oz.

2 tsp Whole Allspice
4 Tblsp Ground Cinnamon
2 tsp Ground Cloves
4 tsp Ground Ginger
2 tsp Ground Nutmeg
1 Vanilla Bean - Insides Scraped

Grind into a fine powder. Store in a clean glass jar for up to 3 months.


Rasam Powder


Makes 10 oz.

10-12 Dried Curry Leaves
1 cup Coriander Seeds
1 cup Red Chilies
1/4 cup Toor Dal
1/4 cup Black Peppercorns
2 Tblsp Chana Dal
1/2 Tblsp Cumin Seeds
1 tsp Turmeric

Dry Roast all the spices (except turmeric) until fragrant.
Grind into a fine powder. Store in a clean glass container for up to 3 months.


Sambar Powder


Makes 10 oz.

10-12 Dried Curry Leaves
1 cup Coriander Seeds
1 cup Red Chilies
1/4 cup Chana Dal
1/4 cup Dried Coconut (Unsweetened)
1 Cinnamon Stick
2 Tblsp Black Peppercorns
2 Tblsp Cumin Seeds
1 tsp Fenugreek Seeds
1 tsp Mustard Seeds
1 tsp Poppy Seeds (Unsweetened)
1 tsp Turmeric

Dry Roast all the spices (except turmeric) until fragrant.
Grind into a fine powder. Store in a clean glass container for up to 3 months.

Spicy Sriracha Powder


Makes 4 oz.

4 Dried Red Chilies
2 Tblsp Dried Minced Garlic
2 Tblsp Dried Minced Onion
1 Tblsp Red Chili Powder
1 Tbslp Cayenne Powder
1 Tbslp Himalayan Pink Sea Salt

Grind into a medium fine powder.
Store in a clean glass container for up to 3 months.




Tandoori Spice Powder


Makes 4 oz.

1 Tblsp Curry Powder
1 Tblsp Cumin Powder
1 Tblsp Coriander Powder
1 Tblsp Smoked Paprika
1 Tblsp Red Chili Powder
1 Tblsp Cumin Seeds
1 Tblsp Turmeric
1 Tblsp Salt

Mix well and Store in a clean glass container for up to 3 months.
