Mixed Berry Custard

At the end of a meal our local Indian restaurant usually gives us a simple dessert of tasty Fruit Custard. It's light, sweet, creamy and the perfect ending to a spicy meal. The only thing that I'm not crazy about is that they often use syrupy canned fruits, so I decided to do my own version of this recipe using my favorite locally available fresh berries. This simple recipe is perfect for a quick or last minute dessert. The slightly sweet and creamy custard melds perfectly with the plump ripe berries for a deliciously light sweet treat.
Here is my recipe:

Mixed Berry Custard

Mixed Berry Custard Ingredients

  • 1.5 cups Milk or Unsweetened Almond Milk*
  • 2 Tbsp Sugar
  • 2 Tbsp Lion Custard Powder
  • 2 Tbsp Warm Milk
  • 1.5 cups Mixed Blackberries, Blueberries, Strawberries, Raspberries Chopped

Instructions

  1. Gently heat 1.5 cups milk till warmed, then add sugar. Stir until it's completely dissolved.
  2. In a small bowl warm the 2 Tbsp of milk and then add the custard powder. Stir it until it becomes a paste.
  3. Slowly add the custard paste to the warmed milk, continuously stirring. Cook the custard on low stirring for about 5 minutes. It should be thick enough to coat the back of a spoon. Take it off the heat and chill in the fridge covered for
  4. Once custard is completely cooled, add the chopped fruits and mix thoroughly.
  5. Serve in individual glasses garnished with fruit. Enjoy!
Yield: 4 - 6 Servings

Cook time: 5 mins.

*You can use other milks (coconut, rice, soy etc.) just make sure they are unsweetened.
