Salmon Cakes

Salmon is probably my favorite fish. It's a versatile, hearty fish that doesn't leave you hungry after eating like some white fish...I'm looking at you Tilapia. There are so many delicious ways to prepare it: Salmon Lox, Salmon Pie, Smoked Salmon Salad, Salmon Poke, Salmon Skewers and of course Salmon Cakes.

I adapted my Grandma Walsh's Cod Cake recipe to make this delicious fish cake using Salmon. This lemony, dill salmon cake is chock full of green veggies and filled out with potatoes making it a great lunch or dinner option.

Salmon Cakes By Cooking for Kishore

Ingredients

• 1lb Skinless Salmon Fillet
• 4 Yellow Potatoes, peeled
• 1 Red Onion, chopped
• 4 Spring Onions, chopped
• 2 Celery Sticks, chopped
• 2 Tbsp Fresh Dill, chopped
• 1 Lemon, zested & juiced
• 1 tsp Salt
• 1 tsp Pepper
• 1 Cup Bread crumbs
• 1 Egg
• Vegetable Oil
• Salad, Lemon Wedges, & Tartar Sauce

Instructions

1. Steam cook the potatoes, and salmon.
2. In a bowl mash the cooked potatoes, and add the cooked flaked salmon. 
3. Add the celery, onions, dill, lemon zest & juice, salt, and pepper. Mix throughly, and form into 3" wide patties. Heat the oil in a pan to medium hot.
4. Beat the egg in a separate bowl and dip the patties first in the egg and then in the breadcrumbs. Carefully place in the hot oil and cook till light brown on both sides.
5. Drain on paper towels and serve hot with greens, lemon and some tartar sauce. Enjoy!

Yield: 4-6 Servings
