Irish Tea Cake



The weather has been absolutely crazy lately, one day it's 70F the next it's 30F! And today we are in the midst of Winter Storm Quinn, who's presenting us with a day of heavy snow and strong winds. While Kishore braved the elements to clear our walkway during the afternoon lull, I was in the kitchen baking something to warm him up. I decided to make a tea cake, just sweet enough to go perfectly with a hot cup of Earl Grey.

For this sweet treat; buttermilk and cream cheese made for a light, fluffy tea cake with a crisp crust, filled with sweet plump golden raisins. 

Here's my recipe for Irish Tea Cake:
Makes 1 Loaf

Ingredients: 

1 3/4 cup Unbleached Flour
1 cup Sugar
1 cup Golden Raisins
1/3 cup Cream Cheese
6 oz Unsalted Butter
2/3 cup Buttermilk
1 tsp Baking Powder
1/2 tsp Vanilla Bean Powder
1/4 tsp Salt
2 eggs

Prep Work: Grease a loaf pan with butter. Preheat oven to 325F.


Directions:
1. Coat the raisins with about a Tbsp of flour. Sift together the remaining flour, salt, vanilla bean powder, and baking powder,


2. In another bowl cream the butter, sugar, cream cheese, and eggs together. Then slowly add the flour mix and buttermilk till well blended; fold in the coated raisins.


3. Pour the batter into the greased baking pan, and level.



4. Bake at 325F for 90 minutes, until top is golden brown and crisp. Remove from the oven and allow to cool on a wire rack before cutting.
